Spicy Fat Free Vegan Black Bean & Quinoa Chili

2 cups of black beans (soaked and cooked with a little garlic and onion powder)
1 10 oz package frozen spinach
1 cup uncooked quinoa, rinsed and cooked according to package directions
1 cup halved grape tomatoes
1 yellow pepper chopped
1 orange pepper chopped
1 onion chopped
2 cloves garlic minced
1/2 roughly chopped cilantro
2 tsp Mrs Braggs Liquid Amino
1 tsp cumin (can be adjusted to taste)
1 tsp cayenne pepper (can be adjusted to taste)

Cook beans, thaw spinach, cook quinoa.  Once quinoa is ready set aside. In a large stirfry pan cook garlic and onions over medium heat with a little water.  Once onions just begin to go translucent add everything else except cilantro and Mrs Braggs.  Cook together until peppers and tomatoes soften. Add liquid amino and additional spices.  Let simmer 5-minutes.

Serves 2 as a main course
